According to the Subway site, in any area they open up in, they drop off a questionnaire asking local people about their preferences for the new store. If the majority of people walking past your eaterie are only going to eat what you dont stock, or refuse to eat there because of what you do stock, it would be business stupidity not to change your menu for the local demographic. This isnt a PC thing gone too far, but simple economics.
