Angies Stuffed Chicken Breasts Ingredients: 4 boneless, skinless chicken breasts with fat removed 4 pieces of Colby Jack Cheese 1 package Cream Cheese 2 jalapeno peppers 1 Tbsp. Minced garlic Honey Barbecue Sauce 1 White Onion, minced Directions: Slice the breasts in half length wise to make 8 breast pieces. Pound breasts until they are 1/4 inch thick. Set aside. Cut jalapenos in half and remove seeds. Chop onion in to quarters. Cut cream cheese in to 8 chunks. In blender (I used my Ninja) combine cream cheese, jalapenos, onion, garlic and blend to a creamy saucy texture. Lay out one breast. Place a slice of Colby Jack cheese on top. Smear the jalapeno sauce over the top. Roll the breast. Place seam side down in your pan. Do this will all 8 breast pieces. Smear honey barbecue sauce over the tops and sides of the breasts. Place in oven at 350 degrees and cook 30-45 minutes or until chicken is done. The thinner you pound the breasts out, the faster it will cook! Serve with a vegetable side. My favorite is California Blend! Experiment! Try different cheeses. Pepperjack is good too!
