Baingan capsicum sabzi, vegetable and fruit salad, pyaaz ki kadhi, khubz (Arabic flat bread, store bought) and plain rice (cooked by open pot method and drained, not in the picture), our lunch today! Red, orange, green, onion pink, peach, cream, purple, yellow, brown! The colours on my plate :) I had mentioned this earlier in 1 of my posts, had read somewhere that, more the colour on your plate, the better it is for your health. Salads were always an important part of our meals at moms place. Back then, not much was available to make them interesting (the coloured peppers, greens, olives, so many different fruits). But now so many things and varieties are available, even in the smallest of cities, all around the year. Almost all my meals have salads, and that too without any dressings or additives. Nature has been so kind in providing us with such amazing flavours and colours. I feel these vegetables and fruits are best eaten in their raw, natural form. And before someone raises the question of whether fruits can be eaten with the meal, let me explain it again. I start my meal by eating fruits, then move on to vegetable/curry and roti, with lots of dal/kadhi. Eat the salad with it. And end my meal with 2-3 tbsps of rice. And of course either chilled dahi or laban (the chhash like dairy product we get here). We love vegetables and can have a biiig bowl of salad, and around 750 gms of cooked sabzi between the two of us. My girls are not very fond of sabzis or salads, but I am hoping, that when they put food out on their tables, in their homes, they will remember what their mother did, and eat healthy meals. This post is just to reinforce the importance of having raw and cooked vegetables, and fruits. I request you all to incorporate 1 big serving, at least in one meal, if not all.
