Baking Lesson 4. Pumla s Banana Carrot Loaf This is one of the best ways to make kids eat their Carotts with no fuss at all. Just sneak some Carrots into the Banana dough. RECIPE: -2 Cups of Cake Flour -3/4 C Sugar or 1 cup if you prefer a sweeter loaf - 2 Teaspoons Baking Powder - 1 Tsp Bicarb - 1 Tsp Cinnamon - Pinch of salt - 2 Bananas ( Mashed) or 3 if you prefer a stickier banana bread. - 1.1/2 Cup Carotts(grated) - 2 Eggs (Whisked) - 1/2 Cup Milk - 1/2 Cup Oil METHOD: 1. Mix flour,baking powder, bicarb,sugar,cinnamon with a p 1. inch of salt. 2. In a separate bowl mix mashed bananas, milk,oil, 3. Add Banana mixture to the Flour mixture and add the Carotts and stir quickly for 1 minute until the dough resembles a mask sour milk. Bake at 180 degrees for 1hr. Cooks note: The dough shouldnt be over mixed. It shouldnt be smooth otherwise the banana bread will be sticky and dense. The bread bread should be fluffy and just sweet enough. Creamed Cheese Frosting Ingredients - 1 Tub Plain Creamed Cheese - 1/2 Cup Butter or Margarine - 1 Cup Icing Sugar sifted - 1 Tsp Vanilla Essence Method 1. Mix or Beat Creamed Cheese and butter until smooth 2. Add Icing Sugar and beat until well incorporated then add vanilla essence. Leave in the fridge until ready to frost your loaf or cake Cooks Note: The Creamed Cheese Frosting can be used for Red Velvet Cake that we all so loved or Cupcakes, Banana Cake, Muffins, and Carrot Cake, Carrot Cupcakes and muffins well.
