Banana bread recipe: (Gluten, dairy and sugar free) Ingredients: 2 cups almondmeal ¼ cup flaxseed meal 2 tsp cinnamon 1 tsp baking powder 2/3 cup chopped nuts (I used walnuts and flaked almonds) 1/3 cup shredded coconut 4 very ripe bananas 1/3 cup agave syrup 4 eggs 1 tsp vanilla extract Method: 1- Preheat oven to 180 degrees 2- Stir all dry ingredients together in a bowl 3- In a separate bowl, add the mashed banana, eggs, agave and vanilla and mix well. 4- Make a well in the dry ingredients and pour in the wet ingredients. 5- Line a loaf tin with baking paper and pour in the mixture. Bake for 40-45mins, or until a skewer comes out clean *You could also make these into cupcakes or muffins if you want it to cook faster (about 20 mins) * I make a loaf at a time, but slice it up and freeze the slices individually so that it doesn’t get eat all at once.
