Bone broths, chicken stocks, beef stocks, fish stocks, beef tea, chicken tea, whatever you like to call them, theyre super nutritious when theyre homemade with bones from ethically raised, grass fed animals and sustainable, wild caught fish! We love nothing more than getting our broth on during our weekends at home! Meat and fish stocks provide building blocks for the rapidly growing cells of the gut lining and they have an amazing soothing effect on any areas of the gut that may be suffering from inflammation. WARNING commercially available stock, or bullion cubes are highly processed and often full of undesirable ingredients and most certainly do not have the same profound healing effects as homemade! To make a good hearty broth its essential to use bones and joints, and not so much the muscle meats. Get your butcher to cut large tubular bones in half so that you can get to the nutritious bone marrow and if making a fish stock, you can use the entire fish. Its the gelatinous soft tissues that are surround the bones and the bone marrow that provide some of the best healing remedies for the gut lining and also your immune system. We add the bones to a large pot of filtered water (fluoride and chlorine free) along with a good dash of raw apple cider vinegar, some sea salt or himalayan salt and freshly cracked or crushed peppercorns. You can also add onion, celery and carrots and any old veggies that need using up to add extra flavour. Then we let that baby slowly simmer on low heat for a good 5 hours. What do we do with our broths? Sometimes we drink them straight, but usually we drain them into another large pot then add lots of fibrous veggies, herbs and spices, we poach chickens in them too. We made beautiful nutritious soups loaded with veggies for the kids over the weekend and they happily gobbled up every last veggie without so much as a peep!
