Budget Biryani The following recipe is the original one from my blog but this week I made an even simpler version with some of the reduced priced lamb blade. The main principle of biryani is that you boil the well rinsed rice in lots of boiling salted water for only 2 minutes then rinse it really well in a sieve under the tap. Then you bake it with more liquid. In the turkey one I used milk but in the lamb blade one I used the gravy from the roast Id made the night before and hot water. 500g minced turkey (thigh meat) 450g basmati rice, washed thoroughly 1tbsp garlic paste 1tbsp ginger paste 200ml milk 3tbsp plain yoghurt 60g butter Sunflower oil for frying 1 onion The following spices Cinnamon (stick or powder) Paprika Cloves Fennel seed Cardamom You will need a large, lidded, ovenproof pan or pot and tin foil to cover. Pre heat oven to 180c/350f/gas 4 1) Fry turkey mince in a little oil and butter until dry. Add minced garlic and ginger (or chopped garlic and grated frozen ginger), fennel seed and salt. 2) Add the yoghurt to the meat. 3) Add a little paprika (or turmeric) and cinnamon to milk thats been heated for 2 mins in the microwave. 4) Bring a large pan of salted water to the boil, add rice and cook for 2 minutes. Drain in a sieve and rinse under the cold tap. 5) Grease the ovenproof pan with butter and layer the rice and meat mixture. Pour over the spiced milk. You can dot the rice with cloves, chilli seeds or a few cardamom pods if you like. 6) Cover the biryani with foil, put the lid on and cover again with foil to seal. Bake for 1 hour then turn off oven and leave to stand for 20-30mins. Garnish with fried onions to serve.
