Chocolate chip muffins that I love to eat: 1 cup whole wheat flour 3/4 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt Mix it together. 1 cup soy milk or almond milk 1 teaspoon vinegar Mix it together in large bowl, let it sit a couple of minutes to CURDLE (yum)while you preheat oven to 350 and line muffin tins or grease them Add 3/4 cup granulated sugar to the soy milk mixture and stir well. Add 1 teaspoon vanilla. Add 1/3 cup oil. Stir it up gooood. Stir flour mixture into soy milk mixture a little at a time. Can be a little lumpy. Add AT LEAST a cup of DARK chocolate chips or even MORE to the batter. Mini chips are best. Fold them in. Put into muffin cups. Bake until knife comes out clean--20-25 minutes? Cool briefly and promptly eat 4 muffins while chocolate is still gooey. Delicious and moist and surely not too bad for you.
