DUCK EGGS Though duck eggs are not commonly used for cooking, they are a healthy and tasty alternative to chicken eggs. Duck eggs are larger than chicken eggs, and contain more protein and minerals. They are also rich in flavor and lend a creamy consistency to the cooked food. Prepare hard-boiled duck eggs. Place the eggs in a vessel filled with water inch above the eggs. Set the vessel to boil on high heat. Remove from heat as soon as the water boils, and let it stand covered for 12 minutes. Drain the water and add cold water, so that the eggs cool. Once the eggs reach room temperature, peel away the shell. Since duck eggs have high protein content, the whites become tough if overcooked. Steam-fry duck eggs. Partially fry the eggs on medium heat for 2 minutes. Add 3 tablespoons of water to the pan; cover and cook for 3 minutes or until the whites become tender. Steam-frying prevents the eggs from overcooking and ruining the texture. Use duck eggs interchangeably in recipes that require chicken eggs, such as cakes, cookies and custards. Duck egg whites whip up higher when beaten -- producing lighter but higher cakes. Since the yolks are high in fat, you get rich, fluffy cakes and desserts when you use duck eggs. Prepare creamy egg nog for 10 people. Duck eggs froth well when whipped, and are ideal for preparing egg nogs. Beat six eggs until they turn frothy. Add 1 cup sugar, 1/2 tsp. vanilla, 1/4 tsp. nutmeg, 3/4 cup brandy, 1/3 cup rum, 2 cups whipping cream, 2 cups milk, and beat. Chill the egg nog mixture and serve cold.
