Desi style chicken curry! There are days when I want to eat fancy exotic meals. And then there are days when I yearn for home-style rustic Indian food. This preparation is an homage to my beloved Kirti auntie; one of the best cooks I have known. It might take me years to come close to her kind of perfection but while I am at it I can still enjoy the not-so-perfect turnouts. :)I Recipe: 1. Wash chicken and marinate in salt, turmeric & yoghurt. Keep aside. 2. Heat oil in a pressure cooker, throw in following spices (khade masale) - bay leaf, cumin seeds, shahzeera, cinnamon stick, green cardamom, black cardamom, cloves. Sauté for a 45 seconds until cumin seeds crackle and sniff the heavenly aroma! 3. Add sliced red onions and sauté on high heat until dark pink in color. 4. Add ginger garlic paste and sauté until the onion color darkens to pinkish-red. 5. Add a teaspoon of red chilli powder and sauté on low heat. At this point the color of onions should be beautiful red. 6. Add marinated chicken and sauté until oil separates. 5. Add tomato, green chilli paste and sauté until tomato paste is cooked and mixed well. 6. Add garam masala and sauté for a few minutes on hight heat. 7. At this point, the color of the chicken should be deep red-brown. Keep the flame at high and let the chicken slightly stick to bottom of pan and then keep scratching it. Be cautious that it does not burn. This gives an earthy and rich flavor to the dish. 8. Add water and cover. Wait for a whistle and turn of the heat. Do not overcook. 9. Garnish with coriander and serve hot with steamed rice! Oh yeah and get ready for the compliments from one and all. Note: A) I used chicken thighs because thats what I had available in the fridge. You can use entire bone-in chicken. B) I use a pinch of salt while sautéing onions to quicken up the browning process. C) I only believe in ghar ka garam masala. I make it at home by dry roasting and grinding the khade masale.
