Diary of a Young Black Entrepreneur, # 114 in a series On Food Bridging Cultures During my travels in the 1990s through West Africa, Hong Kong, Shanghai, and Tokyo, I was reminded of many similarities in cuisines — raw fish in African port cities, the complex spice mixtures on pork I ate in Asia. People wouldn’t expect that black and Asian food would be similar, but look at the cucumber, red onion, and tomato salad they eat in the South. It’s like the pickled daikon salad I’ve eaten in Asia.
