Edamame Brown Rice Salad Everyone keeps asking me for this recipe, so here goes 1 16 oz. pkg frozen shelled edamame 1 cup frozen corn, thawed 2 cups cooked brown rice 1 red bell pepper diced 2 green onions sliced 1/4 cup chopped fresh cilantro 2 TBSP olive oil 1/4 cup fresh squeezed lemon juice 2 TBSP fresh squeezed lime juice 1/2 tea chili powder Salt n Pepper to taste I rinse the frozen edamame, dump it into a bowl with all the ingredients and mix. Refrigerate overnight and serve cold. Serves 6-8 212 Calories (32% from fat) 3 fat grams total fat (1 gram saturated) no cholesterol, 30 grams carbs, 8 grams protein 10 mill. sodium, 5 grams dietary fiber Got this out of the Kansas City Star newspaper on July 3rd, 2013 visiting my sister, made it and it has been a keeper ever since. :) Share to your page to keep the recipe.
