Erin will be attending GI/Rheumatology Camp at Flying Horse Farms later this month. We have never been there before and my only interactions with the staff have been by telephone or e-mail, but I can tell you that this is an awesome place! They have been incredible! Today I spoke to the woman in charge of feeding all 150 campers and she was concerned about Erin! 1/150!! She sent me a copy of her menu plan for the week and we are working on a plan together for keeping Erin well fed and within her diet as much as possible while still allowing her to have fun. I am just amazed by the dedication of this staff! With that in mind, I will be attempting to make Fructose/Sucrose free marshmallows today to see if they can be roasted like normal marshmallows. I feel like a mad scientist set free in the kitchen lately!
