Fish & Rice: 1 cooked cup of rice; 1 pint canned salmon, drained; 5 green onions, chopped; 1 cup shredded cheddar cheese; pepper; and Lea & Perrin sauce. Put half the cooked rice on the bottom of a casserole dish. Mix together the canned salmon, green onions, pepper and Lea & Perrin Sauce, then spread on the rice. Sprinkle the shredded cheese on top the salmon mixture. Spread the remaining rice on top the cheese. Sprinkle some pepper on top the rice. Cover and bake in a 350 degree oven for 20 minutes. Enjoy a fast easy dinner. Sliced tomatoes goes real well with the dish.
