Fish cakes Ingredients 175g Fresh fish 175g Potatoes 30ml Milk 25g Margarine 1/2 Egg 10ml Parsley 10ml Lemon juice 1 Small garlic clove Pinch cayenne pepper Seasoning to taste For coating 1 Beaten egg 50g Wholemeal Garnish 2 Lemon wedges Sprigs of parsley Method 1) Prepare the following ingredients: Wipe the fish. Potatoes- wash, peel and cut into 4. Garlic- Crush. Parsley- chop finely. 2) Boil potatoes in salted water in a large pan. At the same time steam pieces of fish, either between two plates on top of the pan or in a steamer. 3) When the potatoes are soft, drain and mash with the margarine and the milk until smooth. 4) Flake the fish, ensuring all the bones are removed. 5) In a large mixing bowl, throughly combine the fish, potatoes, egg, parlsey, garlic and cayenne pepper together. Taste and season as required. 6) Chill mixture for 30 minutes in the refrigerator. 7) Lightly flour working surface and form fish mixture mixture into a long roll. 8) Cut the roll into 6-12 fish cakes. 9) Coat with beaten egg and breadcrumbs. 10) Preheat the grill to medium and cook the fish cakes for 4-5 minutes on each side until browned. 11) Serve immediately, garnished with lemon wedges and parsley en branche.
