Four Ewe Ranch Fruit Crisp with Vanilla Whipped Cream- Preheat oven to 375. Grease casserole dish with butter or coconut oil. Toss in fruit (I used three plums from the Island Farm Market, apples from my tree, and blackberries from my yard..approx 4 cup fruit) and stir in 2 teaspoons of instant tapioca. Let sit while you make the crust. 1 cup flour, 1 cup old fashioned or steel cut oatmeal, 2/3 cup brown sugar, optional pinch of cinnamon, cardamom & fresh grated nutmeg, 1 1/2 stick cold butter. Cut butter into dry ingredients until it resembles crumbs. Toss a handful of the crumbles into the fruit and stir, then pour the rest over the top. Dot the top with about a Tablespoon more of butter. Bake for 30 - 45 min or until fruit is bubbly and topping is browned. WHIPPED CREAM: 1 pint whipping cream, 1 vanilla bean (cut open and scrape insides or use 1/4 tsp vanilla extract), 1/4 cup or less of sugar (to taste). Whip until stiff peaks and chill until the crisp is ready. Serve crisp hot with the cream on top. Yummy!
