From one of our great floor staff, Maeliss, describing our Smoked ham hock terrine with pickled vegetables special As winter is coming, Macleay St Bistro offer you a trip with an old fashioned dish, the head cheese, or smoked ham hock terrine which is a cold cut that originated in Europe. Its not about a dairy cheese, but a terrine made with pigs flesh and jelly. Since the middle ages, this pâté have been flavoured with onion, black pepper, bay leaf, salt and vinegar. Our head chef Tom offers you some pickled vegetables such as carrot, cipollini onions, cauliflower and beans to match with the sour of the terrine. Served at room temperature with sour dough toasts, we do recommend a glass of smooth and well balanced Chardonnay from Burgundy, with a taste of citrus fruits, spices and honey.
