Ingredients: 6 lobster tails 1/4 cup olive oil... 1/4 cup fresh lemon juice 1 tablespoon fresh dill 1/4 teaspoon salt 1/4 teaspoon black pepper Directions: Preheat grill for medium-high heat. Cut lobster tails in half lengthwise, exposing flesh. Combine remaining ingredients in small mixing bowl. Brush mixture onto flesh side of lobster tails. Place lobster onto grill and cook for 5-7 minutes, depending on the size of the lobster tail. Make sure to turn once during cooking process. Remove from heat and serve. __________________________________ Grilled Rock Lobster Tails - Recipe 2 of 4 Ingredients: 1 tablespoon lemon juice 1/2 cup olive oil 1 teaspoon salt 1 teaspoon paprika 1/8 teaspoon white pepper 1/8 teaspoon garlic powder 2 (10 ounce) rock lobster tails Directions: 1. Preheat grill for high heat. 2. Squeeze lemon juice into a small bowl, and slowly whisk in olive oil. Whisk in salt, paprika, white pepper, and garlic powder. Split lobster tails lengthwise with a large knife, and brush flesh side of tail with marinade. 3. Lightly oil grill grate. Place tails, flesh side down, on preheated grill. Cook for 10 to 12 minutes, turning once, and basting frequently with marinade. Discard any remaining marinade. Lobster is done when opaque and firm to the touch. ______________________________________________ Simple Grilled Lobster Tails - Recipe 3 of 4 Ingredients: 6 lobster tails butter, melted Directions: To prepare lobster tails for grilling: Using kitchen shears, cut the top membrane off the lobster tails and discard. Partially loosen the meat from the shell, leaving the end of the tail attached. Gently lift the loosened tail meat up and rest just on top of the shell. Brush tails with melted butter. When the grill is ready, arrange the tails shell side down 3 to 4 inches from the heat and cook 8-10 minutes. Brush with butter again, and turn tails over so the meat side is on the grill. Continue to cook 2-4 minutes until the meat is cooked through. Serve with melted butter. ________________________________________________ Grilled Lobster Tails with Herb Butter - Recipe 4 of 4 Ingredients: 1 stick salted butter, at room temperature 2 tablespoons chopped chives 1 tablespoon chopped tarragon leaves 1 clove garlic, minced Dash hot sauce Freshly ground black pepper 4 (7-ounce) lobster tails Olive oil Kosher salt Lemon wedges, for garnish Chive sprigs Special equipment: 4 metal skewers Directions: Preheat your grill to direct medium-high heat In a small bowl blend butter, chives, tarragon, minced garlic, hot sauce, and black pepper with a rubber spatula. Blend thoroughly. Cover with plastic wrap and reserve. Using kitchen shears, butterfly the lobster tails straight down the middle of the softer underside of the shell. Cut the meat down the center without cutting all the way through. Insert a metal skewer down the lobster tail so the tail stands straight. Brush the tails with olive oil and season with salt, to taste. Grill lobsters cut side down over medium high heat about 5 minutes, until the shells are bright in color. Turn the tails over and spoon a generous tablespoon of herbed butter onto the butterflied meat. Grill for another 4 minutes, or until the lobster meat is an opaque white color. Remove lobster tails from the grill and serve with more herb butter and lemon wedges. Garnish with chive sprigs
