Herb Sirloin w/ Peppers Ingredients: 3/4 tsp(s) oregano 3/4 tsp(s) thyme salt 1/4 tsp(s) pepper - black (ground) 1 sirloin - steak (1 steak is 4 oz) 2 tbsp(s) oil - olive 1/4 onion(s) - red 1 pepper(s) - bell (your choice - medium) 1/2 tomato(es) - medium pepper - red (crushed) 1 tsp(s) vinegar - red, wine 1 tsp(s) capers 1/2 potato(es) - medium (6 oz) Directions: For the steak: 1. Chop oregano and thyme. Mix oregano, thyme, salt and pepper in a bowl. Rub herb mixture on both sides of the steak. Cover and refrigerate for 4-6 hours. 2. Heat grill pan (or barbecue if available) over medium high heat. Drizzle steak with 1 T olive oil. Cook steak to desired doneness. Let rest for 5 minutes then slice crosswise into slices. For peppers: 1. Slice red onion. Chop bell peppers and tomatoes. 2. Heat olive oil in large pot over medium heat. Add onions and saute until tender. Add bell peppers, tomatoes, crushed red pepper, and salt. 3. Cook until peppers are tender. Meanwhile, chop oregano and thyme and boil and mash 1/2 medium potato. Stir in red wine vinegar, capers, oregano and thyme. Cook for 3 more minutes. 4. Arrange steak slices on the plate with peppers and mashed potato and serve.
