Heres a great Quinoa recipe - high in protein & slow GI carbs Smoked paprika and cumin quinoa with poached eggs Serves 2-3 1 cup quinoa 1.5 cups of hot chicken stock in boiling water 2 tsps ground cumin 1 tsp smoked paprika 2-3 eggs extra virgin olive oil fresh ground pepper Rocket, dill, chives, parsley or coriander Rinse and drain quinoa. Add hot chicken stock to quinoa sprinkle in the spices and simmer for 15 minutes with lid on. (Keep an eye on it after 10 minutes). Poach eggs. To serve add a good drizzle of olive oil and fresh pepper to the quinoa. Chop up some rocket and any herbs you have and stir them through the quinoa. Divede between 2-3 bowls and place an egg on top of each one. Serve with the egg burst a little so yolk is pouring over quinoa!
