Hi Everybody - Jeanette here :) Today is Two Recipe Tuesday :) This is what the we are having for supper. It is very calorie friendly. LOW CALORIE GYRO MINI PITAS - I like using cubed lamb rather than lamb loaf, it will help keep quite a few unneeded carbs out of the pita(s). 2 pounds small (1/2 cubes is what I like to use) Lamb, the leaner the better., 18 4 Whole Wheat Pitas, I make mine fresh but the store boughten ones are just as good, 2 Large Tomatoes diced (we like ours chunky), 1 Large Onion diced, 1 Cucumber, peeled and sliced, and one jar of Kalamata Black Olives, drained and diced. To make the Tzatziki Sauce- 1 (6) ounce container of Organic Greek Yogurt, 1 Whole Cucumber, peeled and diced, 1 or 2 cloves of fresh Garlic, 1/2 small fresh lemon juice (just cut the lemon in half and squeeze the juice in bowl. Dice up your tomatoes, and onions. Peel & Slice one of the cucumbers. Chop through the drained olives., Place 1tbs extra virgin olive oil into the skillet, heat to medium high. Throw in the small cubed lamb meat. Cook for 5-6 minutes, or until center of the meat is slightly pink. Fill your pitas :) Then to make the Tzatiziki Sauce.. combine Greek Yogurt, Diced cucumber, garlic and lemon juice into food processor, If you dont have one the blender works great too.. Blend until sauce is smooth, no cucumber chunks or pieces, you want this to be smooth it can be alittle runny,( I normally take the cucumbers once peeled and diced and wrap a paper towel around to get some of the water out. top your pitas) this will make 18 4 pitas, 166 Calories and 14.2 Protein - I serve this with a Couscous Salad - 1 cup of chicken broth 32-oz, 3/4 cup uncooked Couscous, 3 medium or 1 cup of Roma (Plum) tomatoes cubed, 1 cup unpeeled cucumber 1/2 cup half pitted Kalamata olives, 1/2 cup chopped green onions, 2 tablespoons of lemon juice, 2 tablespoons olive oil, 2 tablespoons cumbled feta cheese. in 2-quart saucepan, heat broth to boiling. Stir in couscous; remove from heat. Cover; let stand 5 minutes., in large bowl, plave tomatoes, cucumber, olives, onions stir in couscous. In small bowl add lemon juice, oil with wire whisk until well blended; pour over the vegetable mixture and toss it really well, Cover tightly and refrigerate for at least an hour or all day,(The longer it sets the better it taste). Sprinkle with the crumbled feta cheese just before serving. 1 serving size 120 cal. Protein 3 grams. Enjoy - Have a great week.. Jeanette & Tinky :)
