Hope everyones having a Merry Christmas Eve. We just put together our favorite breakfast casserole. The kids dont think its Christmas without it! And this year, they helped! Christmas Breakfast Casserole - 1 lb sausage - 5 eggs - 2 cups cheddar cheese, shredded - 2 packs refrigerated crossant rolls Brown sausage. Drain. In large bowl beat eggs. Add cheese. Mix well. Add sausage to egg/cheese mixture and mix well. Layer one pack of rolls in bottom of 9 x 13 pan. Spread meat/cheese/eggs over rolls. Layer second pack of rolls over mixture. Cover. Refrigerate overnight. Bake next morning at 350 for 30 - 35 mins. Enjoy!
