I am in the mood for some home made chicken soup. In a pot I put in a chicken cut into 8 pieces. I also remember what my mother once told me about making soup, "soup is best cooked with bones." So I also put in some chicken backs, 4 to a package. I then put in some fresh veggies, cut coursely as these will be thrown away, one onion, some carrots, celery, and some fresh spices, salt & pepper, sprigs of rosemary and tyme, leaves of sage and a few cloves of garlic. Once it comes to a boil, I will simmer for 2 hours, stirring occasionally. Once all cooked, I will keep the broth and chicken only and filtering and throwing away all of the veggies. With the stock remaining, I will cut up the chicken into pieces, cook separately the barely, which I happen to like but noodles can be used, put in some frozen mixed veggies, then add the barley or noodles salt to taste. This is how I like it. If you have any suggestions, let me know and I will try it in my next pot.
