I couldnt put it off any longer; I bottled the carambola wine tonight. Yield was 4.2 gallons of high octane stuff. This is the third batch of carambola, and the first time I got a color quite this pretty; probably because I used 40 lb of fruit (we were drowning in the stuff), and let secondary fermentation run over a year. For the second time, I avoided using sulfites, and the color, bouquet and taste are all excellent. Next up: raspberry Ive accumulated enough fruit, and ordered fresh yeast. Just as soon as it arrives, Im ready to boogie...
