I want to share a recipe with you that our insurance company printed on a flyer and sent to me :) It is Fruit Salad with Rhubarb Sauce. Now, I am not a fan of rhubarb because it tastes really bitter to me. Is there any way that you have used rhubarb (which is full of vitamin C and dietary fiber) that makes it not taste so bitter without adding cups of sugar? Fruit Salad with Rhubarb Sauce Ingredients: 1/2 cup water 2/3 cup sugar 3 cups thinly sliced rhubarb 20 seedless grapes 1/2 orange, sectioned 12 Strawberries, hulled and halved 1 apple, cored and diced 1 peach, sliced 1/4 cup fresh blueberries 1. In a medium saucepan, bring water and sugar to a boil over medium heat. Stir in the rhubarb. Turn heat to low, cover, and simmer until rhubarb is soft, about 10-20 minutes. Mash up. Let cool in the refrigerator, about an hour. 2. Mix all the other ingredients together along with 2/3 cup of rhubarb sauce. Stir gently. Refrigerate for at least 2 hours so the flavors can blend.
