Its nothing fancy, but this is the chowder recipe: • 1 medium onion, diced • 2 carrots, diced • 3 large potatoes, cubed • 2 tbsp butter • 1/3c white wine • 2 tsp coriander • 2 bay leaves • 4c stock • 1c half and half • 1 tsp flour (you can use corn starch) • 2 cups corn • 1/2 cup hard cheese, shredded (I used Parmigiano Reggiano) • cracked pepper to taste Step 1: Melt butter in the bottom of pot. Add onion and carrots. Once the onions are translucent, add the coriander. When the coriander is fragrant, pour in the wine. Let it cook down (about 2-3 min) Step 2: Add potatoes, stock, and bay leaves to pot. Bring to a boil, reduce heat and allow to simmer until the potatoes are fork tender. Step 3: Add corn and pepper to taste. Whisk the flour into the half and half to make a slurry. Once it is mixed well add to the pot. Also, add the cheese at this point. Continue to whisk, and once everything is blended, cook for an additional 3-4 minutes. At this point, I like to use an immersion blender to partially puree the soup. Make sure to leave plenty of veg though.
