Ive always loved baking, but now that Im adhering to a vegan diet, baking has become more challenging. Replacing butter is easy - coconut oil is fantastic in baking. Ive used nut milks instead of dairy for many years, but what about eggs, that magic ingredient that gives so many baked goodies texture and fluff? Egg replacers like Ener-G can be hard to find and also sometimes lead to a chalky taste. Being gluten free, Bobs Red Mill egg replacer (starring wheat gluten) is out. So, what are the alternatives? I found Joy Wilsons list of vegan egg substitutes - and instructions - really helpful and plan to test out some of these options. Just sharing in case anyone else is facing a similar dilemma or is experimenting with vegan and/or gluten free baking!
