Ive had a relatively shitty day. So, I wanted to cook something I really love for dinner, and because I am also SUPER NICE I will share this recipe, created by my hubby. Unfortunately for you, one of the ingredients you wont be able to find EXACTLY, a hot sauce we get from the beautiful island of Dominica. But, you can substitute whatever folks consider hot sauce here in the US of A. FIX IT NOW! Pauls Delicious Beans and Rice 1 can of black beans, well drained 1/2 of a med/large Vidalia onion diced fine 2 big tbsp. minced garlic 3 tablespoons olive oil 1/4 lb. Boars Head honey maple turkey chopped fine Dominica hot sauce--oh wait, you cant get that...sad face...use your favorite hot sauce instead. 1 cup of prepared wild rice blend (I make a blend of brown and long grain black rice. Cook like you normally would) Sharp cheddar cheese shredded (use something good, okay? And notice I dont give a quantity--YOU CAN NEVER HAVE TOO MUCH CHEESE) In a large pan add the olive oil and heat over medium heat. Add the minced garlic and sauté for a couple minutes. Add the onion and caramelize it for 8 or so minutes. Really caramelize it...it makes all the difference. Add the turkey, and cook till its all browned and lovely. If the mix seems dry or starts to stick, add a bit more olive oil. While are doing this, heat the black beans in a small saucepan over med/low heat, and cook the rice in a medium sauce pan. Add your favorite hot sauce to the beans while they cook--as much or as little as you like (dont be a wimp). Simmer the beans, but dont let them cook to mush. Once they simmer for a minute or 2, turn off the heat and set aside. Add the cooked beans to the turkey/garlic/onion mixture when that is done and stir it all together. Remove from heat. When the rice is done (20-25 minutes), divide it on two plates and top with the beans/turkey mixture, then top with an avalanche of cheddar. ENJOY, preferably with a really good, cold beer.
