Ive never been able to bring myself to plunging a live lobster into boiling water, or even worse, doing what my mother did, which was starting them in cold water in a big pot and hearing them scratching frantically as the water heated. brrr, even a missionary doesnt deserve that! Im working my way up to what seems more humane, which is putting lobsters in the freezer until they are numb, then boiling them. By the time they wake up.... The other day, however, I bought steamer clams. Ive eaten them all of my life, but never bought them and never cooked them. I knew enough to put them in water with some sea salt and corn meal to soak overnight. Some floated and didnt extend their necks and I feared they were dead. It took almost 48 hours before all of them extended their necks and proved that they were, indeed, alive. But now Ive gotten attached to them and it seems wrong to cook them. :-(
