Kens Buffalo-Wing Rib Eyes I concocted this recipe on a whim yesterday afternoon and surprisingly its a real keeper. Try it, I think youll like it (and its not at all as hot as you might imagine.) Marinade (for 2 steaks): 1/4 cup Franks Red Hot sauce (or other but not one with too much vinegar.) 1/4 cup fresh lemon juice 1/8 cup grape seed oil 1 tbsp Worcestershire sauce 2 cloves FRESH garlic, minced 1 tsp coarse salt (kosher or sea) 2 tsp freshly ground South African Smoke rub (Trader Joes) Finishing Butter: 4 tbsp softened butter 2 tbsp coarsely crumbled blue cheese 1 tbsp prepared horseradish Combine all marinade ingredients and mix thoroughly in a large zip lock bag. Add steaks to bag, burp, seal and massage bag until steaks are evenly coated. Marinade in the fridge for 3-4 hours. Mean while, soften butter; add blue cheese and horseradish and mix thoroughly with a fork. Cover and refrigerate until serving time. Remove steaks from marinade, discard excess marinade and patty steaks dry with a paper towel. Grill as usual to 5 degrees below your target temp. Remove from grill, transfer to a WARMED plate and cover for 5 minutes. Place a large dollop of the finishing butter on each steak and serve.
