Kombucha done! I did not have a 1 gallon glass jar available tonight, so I used 2 half gallon jars and cut the scoby in half after adding a cup of starter and both halves to the whole pot to incubate for half an hour. Now I just cover them with a cotton cloth and rubber band the tops and put them in a warm well ventilated area for a week. Its done when it tastes like sparkling cider. Then you bottle it, keeping a scoby and a cup of this for the next fermenting cycle. I will post when its ready.
