Last weekend I made a family recipe from an old friend for a pancake that was halfway between a pancake and a crepe. I didnt feel comfortable sharing that recipe since it was her familys. So today I decided to make a traditional crepe, this recipe came from allrecipes and just like last week it turned out really well. I am amazed at how easy crepes are to do, I imagined them to be much more difficult. After reading the comments, I decided to add two tablespoons of sugar to the recipe (one person added 1/3 cup). I think you would leave that out if you were using a savory filling. My filling here was Nutella, strawberry jam and banana. I sprinkled a little powdered sugar on top. Next time I think I will omit the whipped cream and syrup, the crepe does not need it. Please note the cooking time is dependent on your medium high heat. I found with mine that 90 seconds was fine for the first side, and 1 minute when flipped over. When you add the batter, make sure you roll/tilt the pan all around so that the batter is evenly distributed. A thin spatula, is great to use here, but not mandatory Basic Crepe Recipe Prep Time: 10 Minutes Cook Time: 20 Minutes Ready In: 30 Minutes Servings: 4 INGREDIENTS: 1 cup all-purpose flour 2 eggs 1/2 cup milk 1/2 cup water 1/4 teaspoon salt 2 tablespoons butter, melted DIRECTIONS: 1. In a large mixing bowl, whisk together the eggs, milk and water. Add the salt and melted butter; then gradually mix in the flour until smooth 2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly. 3. Cook the crepe for about 2 minutes, until the bottom is light brown.
