MUSSELS IN WINE TOMATO BROTH ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Ingredients: (serves 2) • 500 grams mussels (or mixed with squid, prawns, sliced fish) • 1/2 bulb fennel sliced (or 2 stalks celery) • olive oil and butter – as needed • 1 onion – chopped • 4 garlic cloves (whole) • 1/2 handful thyme • 1 handful Italian parsley • 2 cups drained canned tomatoes • chili flakes / paprika – to taste • 1/2 cup dry white wine • sliced baguette to serve Method for Mussels: 1) Heat up oil/butter in pot (2) Saute onion until soft and fragrant. Add in fennel/celery and fry. (3) Add in garlic and thyme and continue to fry until fragrant. (4) Add in (i) mussels, then (ii) tomatoes followed by (iii) chili flakes/paprika and stir to mix. (5) Turn the heat on high and add in wine. Bring to a boil and cover until the mussels are opened. (6) Once mussels are opened, remove from heat. (7) Season with salt and pepper. Add in parsley and serve warm.[Note: Discard any unopened mussels] Method for baguette: (1) Slice baguette and place in baking tray. (2) Drizzle with olive oil, sea salt (or any flavored salts) and freshly grounded black pepper (3) baked in pre-heated oven at 200C for about 10 minutes or until golden brown.
