Made this pesto on the fly for dinner tonight. Not really following a recipe so you’ll have to adjust to your taste. In a blender I add a big bunch of -basil leaves -raw cashew nuts -garlic -avocado (though after tasting the finished product you can go without) -mild mustard, lemon juice (I add extra after tasting the end result. I like my pesto to have a bit of zing) -extra virgin olive oil, if you have pine nuts you can add that too -nutritional yeast (aka nooch). Blend till smooth. Taste and add extra ingredients to desired taste. I added more salt, garlic and lemon. Mix into just cooked pasta, top with fresh basil and sundried tomatoes. If you have capers you can use that too, they give the dish a bit of oomph. And walnuts (optional) I eat walnuts with everything lol. I’m also trying out these vegetarian sausages I bought from coles for the first time. It’s a bit blah…but it’s good source of protein. I think it’ll taste better in a tomato based sauce. Overall, the sauce turned out pretty well! I made enough for two servings. Creamy and basily and yummy, and vegan! #veganpesto #whatveganseat #plantpowered
