Mince and veggie patties complimented with tomato salsa. I served these with potato and sweet potato chips, steamed snow peas, and mixed salad. Recipes below. The kids had a movie playmate and they wanted Maccas for lunch. I didnt have the heart to say no! Seeing what they ate and how unhealthy and lack luster it looked, I made my version of burger and chips for dinner! #glutenfree #dairyfree #nutfree #lunchboxfriendly Mince and veggie patties: Ingredients: 500g pork and veal mince, x1 carrot, x1 zucchini, 1/2 small onion, x1 clove garlic, x1 egg large handful of parsley, x1 stalk rosemary and thyme, salt/pepper and coconut oil for cooking. Method: placed the peeled carrot, zucchini, onion, garlic and herbs in a food processor. Whizz until finely chopped. In a fry pan add some oil and add all the chopped veg. Sauté for 5-7 mins or until softened. Set aside to cool. In a bowl add the mince, cooled veg, egg and season with salt and pepper. Combine well. In a frypan add some coconut oil (1 teaspoon). Roll the mince/veg into small balls and flatten to resemble a party. Dont overcrowd the pan as they will take longer to cook. Cook on both sides until golden. Remove and set on absorbent paper. Cook the remaining batches. Yields approx 18 mini patties. Tomato salsa: Ingredients: 1/4 onion diced, x1 clove garlic crushed, 1 tin of tomatoes, pinch of dried oregano, salt and oil for cooking. Method: add diced onion and garlic to a frypan with coconut oil. Sauté until softened. Add the crushed tin of tomatoes and fill a quarter of the tin with water. Add to the pan. Season well and sprinkle in oregano. Bring to the boil, then lower the heat and cook for at least 20 minutes or until it reduces to a thick sauce. Sweet potato and potato chips: Ingredients: 1 large sweet potato, x4 washed potatoes, x1 sprig of rosemary, coconut oil and sea salt. Method: slice all the potatoes to a similar size. Preheat oven to 180-200 deg. To a tray add chopped potatoes, melted coconut oil (I used 1 tablespoon), sea salt and rosemary. Mix to ensure all the potatoes are coated in the oil/salt. Bake for 45 mins. They were amazing. Crunch on the outside and soft in the middle.
