Mini Chocolate Chip "Skinny" Scones Serves 12 A chocolate chip scone as good as the coffee house without the coffee house price (or crowd). Prep Time - 20 min Cook Time - 20 min Total Time - 45 min Ingredients 3/4 cup low-fat buttermilk 1/4 cup sugar 2 tsp. vanilla extract 1 egg 2 cups all purpose flour 1 tbsp baking powder 1/2 tsp salt 3 tbsp chilled butter, cut into small pieces 3/4 cup mini chocolate chips Topping (optional) 1 egg white 1 tbsp. sugar Instructions Preheat oven to 375 Line a baking sheet with parchment paper In a medium bowl whisk together buttermilk, sugar, vanilla and egg until well blended In another bowl combine flour, baking powder & salt Cut in chilled butter with a pastry blender or 2 knives, until the mixture resembles course meal Gently fold in chocolate chips Add milk mixture, stirring until just moist Place dough on a floured surface and knead 4-5 times with floured hands Form dough into a 9-inch circle on baking sheet, it should be about 3/4 inch thick. Use a knife and cut dough into 12 wedges If using topping, brush egg whites over the top of the scones and sprinkle sugar over the top Bake for 18-20 minutes until golden ENJOY!!
