Ok cauliflower fans, heres the pasta recipe. But Ive changed it a bit. First, I roast the cauliflower with olive oil, salt and pepper in a 425 oven until its browned, turning it after about 15 minutes. Second, I ditched the sage. It really doesnt add anything. Third, I find shredded mozzarella worked better than fontina. And fourth, go light on the crushed red pepper. It can really overpower the cauliflower.
