Quick & Healthy Breakfast Ideas! Quinoa porridge with cranberries and raisins: Ingredients: - 3/4 cup quinoa, rinsed and drained - 500ml water - 375ml low cal milk - 1/2 cup dried cranberries - 2 tablespoons raisins - 1/4 coarsely chopped Walnuts Directions: - combine the quinoa and water in a Saipan and bring to the boil. Reduce the heat to medium-low and cook, covered for 10 minutes. - stir 1 cup of the milk and dried fruit and nuts. Cook, covered, for another 10 minutes, then stir in remaining milk. Serves 2 (331 cal) prep 5 minutes, cook 20 minutes. Four egg white omelette! Ingredients: - light olive oil spray - 4 egg whites - 1 tablespoon cottage cheese - 120g smoked salmon or tuna in spring water - 1 tablespoon chopped chives Directions: - heat frying pan and spray with light olive oil spray. Add the egg whites and roll the pan so the egg whites evenly cover the base of the pan. Cook on low heat for 3 minutes. - when the sides of the omelette lift easily, add a dollop of cottage cheese to the middle and fold the omelette over on itself. Top with the smoked salmon and chives. Serves 1 (300 cal) prep 5 minutes cook 3 minutes. Boiled egg and soldiers! Ingredients: - 2 slices whole grain toast - 1 egg Directions: - bring a saucepan of water to the boil, then simmer the egg for 5 minutes. Slice the toast into 1cm strips and dip in the egg. Spread the toast with 2 tablespoons low fat cottage cheese for an extra protein burst. (Adds 40 cal) serves 1 (255 cal) prep 5 minutes cook 20 minutes. #GettingFit&StayingHealthy4Life.....
