Raw Milk is a superfood! Milk isnt bad.. how we process it and the negative, biased, religious, unproved propaganda surrounding it in so called conscious and vegan circles are. Pasteurization - This denaturing process heats the milk up to 161 degrees for 15-20 seconds. That is a high enough temperature to kill mostly all bacteria in milk. 1. This limits companies liabilities. 2. Extends shelf-life (less life equals more shelf life, dead for a long time or stable on shelf for extended time without the need of refrigeration) 3. Destroys all enzymes (not the goal of pasteurization but a side-effect), killing mostly all bad bacteria, it kills off the good bacteria Lactobacillus. This makes the milk hard to digest hence being lactose intolerant.
