Recipe for Farfalle with Ham, blueberries and feta 8oz whole grain farfalle (get your grains and fiber!) 1/4c buttermilk 1/4c sour cream 1/2c mayo zest from 1 lemon 1 tbl sugar 1 tbl fresh or 1/2tbl dried thyme 1/2 tbl dried oregano salt and pepper to taste 1 4oz pkg blueberries 1/2 red onion, julienned or diced 4oz crumbled feta 6oz quality smoked ham, sliced 1/4" thick and diced Prepare farfalle (bowties) per instructions. Make sure to heavily salt water with kosher salt as this is the only way to truly season your pasta. Prepare a large bowl of ice water to cool pasta after cooking. To make pasta salad dressing, combine all ingredients from buttermilk thru salt and pepper to taste, in first set of ingredients. Set aside in fridge to combine flavors. When pasta is finished cooking, drain, and transfer strainer to ice bath for about 30 seconds until pasta cools. Lift pasta out of ice water and put in large mixing bowl. Add ham, feta, blueberries, and red onion. Mix. Add dressing slowly, stirring to mix. After pasta sits for about 15 minutes you may notice much of the dressing has absorbed into pasta and may want to add more to your liking. Taste for salt and pepper. It may sound like a strange combination but I promise it was a hit in my house :) Pics to follow.
