Remember when we were told saturated fat was bad, and polyunsaturated fat was good, even heart healthy? Well, they were wrong! Bottom line: Vegetable oils are NOT healthy, and proven to contribute to heart disease! Baaaddd stuff! So what to use instead? Avocado oil or ghee for the stovetop, cooking & baking (they withstand higher heat); coconut oil, palm oil or butter for baking, and olive oil only for sauteeing and dressing. If your oil smokes, throw it out and start over! Once it smokes, its damaged.
