Salisbury steak with mushroom sauce MUSHROOM SAUCE: 1 tbsp. dehydrated minced onion 3 tbsp. butter 3 tbsp. flour 1/8 tsp pepper 1 can (4 oz.) mushrooms, liquid drained and reserved 1 beef bouillon cube water 1/4 tsp. bottled browning sauce SALISBURY STEAK MIXTURE: 1/3 cup minced onion 1/3 cup minced green pepper 1/4 cup chopped celery 1 garlic clove, minced 2 tbsp. butter 1-1/2 lbs. ground beef 2 tbsp. minced chives or green onion tops 1/2 tsp dry mustard dash paprika 1 tsp salt 1/2 tsp. pepper SAUCE: in pan, melt butter and saute onion til soft. Stir in flour & pepper, blend well. Add mushrooms & bouillon. Add reserved mushroom liquid and enough water to make 1-1/4 cups, stir & cook till thickened. Stir in browning sauce. Keep warm while preparing steaks. Steaks: In skillet, saute onion, green pepper, celery & garlic in butter on low heat. Remove from heat & add to remaining ingreds., mix well. shape into 6 patties, about 3/4 in. thick. Broil about 7 min., turn & broil about 5 more min., or til cooked through. Serve with mushroom sauce.
