Sharing Cooking tips I follow religiously . 1, Do not use dried herbs in the same quantity as fresh . Use 1/3 the amount in dried as is called for fresh . 2, Always start cooking with a smoking hot pan . 3, Do not use oil when boiling pasta , rice or noodles . It will keep the sauce / flavors from sticking to the cooked pasta , noodles or rice . 4 , Always make sure all the ingredients used for baking or desserts are at room temperature before you start your recipe . ( unless the recipe is called for chilled butter or cold water ) 5, The best way to store herbs is to wrap them in a damp paper towel and place inside a plastic bag in the refrigerator . 6 , To slice meat into thin strips, as for Chinese dishes . Partially freeze and it will slice easily . 7 , Do not over cook pie fillings especially those which are thickened using corn starch . The filling tends to break and quickly becomes watery . 8 , If a cake / cookie recipe calls for nuts, mildly roast them in an oven first and then dust with flour before adding to the batter to keep them from settling to the bottom of the pan . 9 , To check for freshness of eggs , examine the shell . Fresh egg shells are rough and chalky while old eggs are smooth and shiny . 10 , while searing or browning foods like steaks , meat balls etc .. , its important not to over crowd the pan or it will steam the food rather than browning them .( it releases moisture as they cook )
