So mi Jamaican Oxtail stew is half done, the oxtail has been cooked in a pint and a half of water and onions in a pressure cooker for 2 hours, its been chilled in the fridge overnight so I can remove the surface fat ....which I have done.....You would not do this in Ja but unless you spend ages trimming off the fat before cooked its very fatty...... Next the carrots, spring onions, garlic, ginger, salt, pepper, allspice, thyme, parsley, curry leaves, paprika, tomatos & a bit of tomato puree, soya sauce, lee & perrins sauce, bay leaf and at the vey end the butterbeans........
