Spicy Caribbean Rolls Loaded with Caribbean Flavor, fresh spices, fresh fruits and vegetables, with the right combination of island heat and taste, it makes you feel like you are on vacation. I created these with the idea of island food with a twist, and with a great balance of lean protein, fat and fiber rich carbohydrates to help you continue to burn fat, build lean muscle, boost your energy and satisfy your need for exotic vacation food while keeping it healthy and fun. There’s room for a little more protein so feel free to have two of these flavor packed rolls. And of course feel free to share too! Ingredients for the Jerk Chicken: Fat free cooking spray 1 Lb. Fresh Chicken Tenderloin Strips 1 tsp. Ground Allspice 1/2 tsp. Ground Cinnamon 1/4 tsp. Ground Nutmeg 1/2 tsp. Ground Kosher or Sea Salt (OPT.) 1 tsp. Ground Black Pepper 1 TBsp. Onion Powder 1/2 tsp. Garlic Powder 2 tsp Fresh Thyme Leaves 1 tsp. Chili Powder 1. Clean the chicken for excess fat, rinse, and set aside until ready to cook. 2. Mix all dry ingredients together and set aside. 3. Heat a prepared sauté pan on medium heat. 4. Rub the jerk seasoning on the chicken and place in the prepare sauté pan. 5. Cover cooking one side and flipping and cooking the other side until completely cooked. 6. Cover and set aside until ready to assemble rolls. Ingredients for the Mango Salsa: 1 Lg. Firm but Ripe Mango, Small Dice 1/2 Cup Red Onion, Small Dice 1/2 Cup Tomato, Small Dice 1 Lg. Ripe Banana, Small Dice 1/2 tsp. Fresh Lemon Peel 1 TBsp. Fresh Cilantro, Minced Fresh Cracked Black Pepper to Taste 2 TBsp. Red Wine Vinegar 2 TBsp Citrus Zero Emv 1 TBsp. Fresh Lemon Juice Toss all ingredients together, cover, and keep under refrigeration until ready to eat. Ingredients for the rolls and plate presentation: 1 package Coconut Wraps (Sunfoods) or a Gluten Free Wrap 2 Cups Fresh Arugula or your favorite Green Leafy Vegetable 1 TBsp. Orange Juice Couple of Toothpicks Assembly and Plate Presentation 1. Toss Arugula lightly in the orange juice. 2. Place a small amount on the coconut wrap. 3. Place a few pieces of chicken on top of the arugula. 4. Carefully roll up the wrap like and egg roll, fold in the ends and securing it with a toothpick. 5. Cut the roll in the center at a 45 degree angle and place on the plate, strategically. 6. Scoop some mango salsa on the plate decoratively. 7. Slice and place the star fruit on the plate in a shingle fashion. Voila! Your plate is complete looking amazing for your friends and guests.
