Stir fry ladies finger in curry powder and tamarind When I first relocated to Penang to work, I rented a room from an old couple whose wife is an excellent cook. So I am fortunate to learn from many different mothers, apart from mine. I used to stand next to her, still in my office clothes, just to observe how she cook. This dish is one of her legacies to me. Ingredients: 15-20 ladies finger (I prefer the dark green/thicker ones) - cut 1 cm length 1 tbsp curry powder (you can put as much as you like) 1 big red onion (cut horizontally and separate the rings) 1 tsp light soy sauce 1/2 tsp sugar a pinch of tamarind (mix in 2 tbsp water) pinch of salt to taste 1 tbsp cooking oil Heat cooking oil, stir fry onion on low heat till soft. Add ladies finger and stir fry on medium heat till half cook. Add curry powder, sugar, soy sauce and pinch of salt. Give it a few stir and add tamarind water on high heat and remove immediately. It is very appetizing.
