THE GOAL: Cook with saukraut, and make it delicious (or at least edible). THE RECIPE: Pork & kraut hash. 1/2 lb ground pork, 1/2 medium onion, 1 potato, 2-3 mushrooms, 1/2 14-oz can saukraut, salt, pepper, sage, apple cider vinegar. Cook pork with salt & pepper; set aside. Cook diced onions and potato in any remaining fat on low heat, adding salt, pepper, sage, and 1/2 tsp butter if desired. Add chopped mushrooms halfway through. Increase heat to brown, once brown, add kraut and cooked pork; mix and heat. Top with 2 spoonfuls of the apple cider vinegar. Makes 3-4 servings. THE RESULT: Tasted great, but somewhat acidic. Those who hate the fermented taste may enjoy serving the kraut on the side. For side dish, use 3 strips of bacon instead of pork, otherwise following recipe. Makes a nicely acidic complement to an otherwise rich or fatty meal.
