Thanks to Kavitha Udayakumar and Sarva, I had the most delicious dosa last night. Nothing beats Kavithas recipes, but this one looks closest to what I had. I have a new appreciation for many varieties of tasty, nutritious Indian lentils, and rice; cooking with a mix of coconut oil and cold-pressed pure sesame oil. I shall hand squeeze tomatoes and water-dipped tamarind for savoring the taste. (According to Indian culture, digestion starts with hands, while preparing meals, as the body starts secreting digestive enzymes by touch) I shall only use SMALL black mustard seeds for getting that pungent taste. I now know that most genuine cumin taste comes from whole cumin seeds. The curry leafs are very aromatic in the mouth and, of course, dried red chilies are delightful in dishes. I was surprised to find out that the coriander, the seed of cilantro, tastes nothing like cilantro. I learned to stir fry with minimal use of spoon to keep the heat at a constant level. I roasted and then hand-grinded a select mix of spices for obtaining freshest taste and aroma. I understand that the sprouted mung beans used in stir fries enhance taste and nutritional value... Life is abundant. I remembered that -again- in Kavithas kitchen.
