The Portland Guardian Fri 6 Oct 1876 OUR LOCAL INDUSTRIES THE CASTLEMAINE, DISTILLERY.Situated at the foot of Barker street near the Barkly Bridge, is a large three storied building originally designed for a flour mill,but used as a store by the late Cornish and Bruce This edifice, with a considerable piece of ground attached has lately passed into the hands of Mr N; Fitzgerald the eminent brewer, who in conjunction with Mr. Newhman has resolved to supply what is deemed a great want in the colony, viz,,a first class distillery. Through the courtesy of the foreman and the maltster, I was shown through.the whole of this wonderful, and certainly extensive establishment . The mill for grinding the malt and the appliances for hoisting lowering re-hoisting and discharging into the hopper and thence conveying it to the monster puddling tub and huge mash tub,supplied by streams of boiling water from two boilers[each containing 800 gallons] the process of pumping the wash into the five gyles each of a capacity of 1600 gallons the three wash recievers containing 1500gallons; the four stills and copper dome 24 feet high the immense quantity of copper piping,and c to describe all these minutely would simply, bewilder the majority of,your readers. But a casual inspection of the works clearly shows, that no expense, ,has been spared that the very best material has been used and workmen of the genuine stamp been engaged in all the branches of this intricate and difficult department of mechanised and scientific invention. Great credit is due to E. D. M. Thomson (from Messers Robertson Bros from of Melbourne]. to whom was .entrusted the erecting of all the copper work. The mechanical wood work, has been well executed by Mr Moyes, an old and much respected employee of one of the firm:The vats were all made, or rather built, by Mr Horner and better work never came from the hands of a tradesman. In fact thewhole affair is of the best description and all appliances of the latest and most approved principle. Steam will be got up in a few days and ere long Castlemaine whisky will no doubt become as famous as its already matching ales. I have forgotten to mention the engine room, but. here, as elsewhere,everything is A1 The huge chimney-stack(built by Cornish and Bruce) is said to be the highest in the colony.
