Vanilla Pumpkin Pie w/Chocolate Almond Crust 2 Cups Freshly Chopped Sugar Pumpkin 1/2 Cup Coconut Oil 1/2 Cup Irish Moss 1/4 Cup Coconut Sugar 1 Vanilla Pod (Or 1 Tsp Vanilla extract) 2 Cups Almond Flour 1 Cup Raw Cocoa Powder 1/2 Cup Coconut Manna (or Oil) 1/4 Coconut Sugar 1. Combine almond flour, coconut sugar, and coconut manna in a bowl. Add more oil until consistency holds itself together with your fingers. 2. Press chocolate crust into a 9″ pie plate about 1/4″ thick. 3. Chill for 1 hr. 4. In a Vitamix or blender, puree chopped pumpkin until fine. 5. Add scraped vanilla pod and coconut sugar and coconut oil. Blend well. 6. Add Irish Moss and blend. Add water until consistency is like pudding. 7. Fill chilled pie crust with pumpkin filing. 8. Chill for 1 hour and serve.
